Moroccan Tajine of Lamb with Dates #Moroccan_Food


Ingredients
2 pieces of lamb meat (neck or shoulder)
2 onions
3 tablespoons olive oil
1 teaspoon ground ginger
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
Some saffron threads
50 grams butter
A bunch of parsley and fresh cilantro
250 grams dates
125 grams blanched and fried almonds
Water

Directions
1-     Peel the onions and chop them finely.
2– In a pan over medium heat, place the olive oil, butter, ginger, turmeric, cinnamon, 

saffron threads, salt and pepper. Add the meat and mix to coat it with the spices.
3– Add the onions, parsley, and cilantro and let it simmer while stirring occasionally

 until the onions become translucent.



4- Add the water to the meat, cover and cook for about 1 hour to 1 hour 30 minutes
 until the meat is almost cooked.
5– 15 minutes before the end of cooking, wash the dates and add them to the pan. 

Cook for 10 minutes then add the honey, stir gently and 
cook for 5 minutes until the sauce becomes syrupy and the meat is tender.




6- Place the meat on a plate, cover with the sauce, place the dates all around and decorate with the almonds. 
Serve hot!
